    Can MISO be made from this koji?

    Yes, miso can be made with the koji sold here though it is grown to increase its saccharification enzymes over those for braking down proteins. Those for proteins are more important for miso. The koji-kin sold here can also be used for either, the way you make koji with it makes the difference. Cooler incubation favors protein emzymes while hotter incubation favors saccharification enzymes.

    The Cold Mountain koji sold at many oriental grocers is made more for miso but also can be used for both sake and miso.
