Blue Kudzu Sake is just beginning their journey to become a Sake micro-brewery in Ashville, North Carolina. Ashville, like my native Portland, is a hot bed for small breweries, so it is no surprise that this team of three friends have emerged from this location. They had experience brewing beer and making some wine so sake seemed like a reasonable beverage to try their hand at. After a few batches they were pleased with the consistency of the resulting sake. Their success gave them the confidence to imagine opening their own place. Taking it to the next level they put together a business plan and are going for it. Want to help out? Update 3-12-2019:
At this point the list of US Sake brewers is badly out of date, I plan to do a consolidated update but until then I will point out a brewery in Southern California. It started back in 2013 I believe and is unique as both a winery and sake brewery, http://larebeldewines.com. Thanks Jim for mentioning this below.
